Saag Paneer

Fresh paneer cheese in a creamy, spiced spinach sauce — a classic vegetarian British-Indian dish. Pan-frying the paneer in butter until golden before it goes into the sauce is what gives it a light crust, so the cubes hold their shape rather than dissolving into the spinach.
