Ingredients
300gyellow toor dal
2ripe tomatoes, diced
1white onion, diced
4 clovesgarlic, minced
2cmfresh ginger, minced
1 tspturmeric
1 tspchilli powder
1 tspground cumin
3 tbspghee
1 tspcumin seeds
1 tspmustard seeds
2dried red chillis
1 pinchasafoetida
1 handfulfresh coriander
Instructions

Simmer dal in 1L water with turmeric until completely soft, about 30 minutes.

Fry onion in 1 tbsp ghee until golden, add garlic and ginger.

Add chilli powder and cumin, cook 1 minute.

Add tomatoes and cook 8 minutes.

Add tomato mixture to cooked dal, simmer together 10 minutes.

For tadka: heat remaining ghee in a small pan until smoking.

Add cumin seeds, mustard seeds, dried chillis and asafoetida — they will sizzle.

Pour tadka over dal, scatter with coriander and serve immediately.
