Ingredients
1.5kgbeef chuck or short ribs
4guajillo chillis, toasted and soaked
3ancho chillis, toasted and soaked
2chipotle chillis
4 clovesgarlic
1white onion, quartered
1 tspground cumin
1 tspdried oregano
1 tspground cloves
2 tbspapple cider vinegar
1Lbeef stock
corn tortillas and cheesefor tacos
Instructions

Blend soaked chillis with garlic, onion, cumin, oregano, cloves and vinegar.

Marinate beef in chilli paste overnight.

Place beef and marinade in a pot, add stock.

Braise covered at 160C for 3 hours until very tender.

Remove beef and shred, skim fat from broth.

For tacos: dip tortillas in fat, fill with beef and cheese, fry until crispy.

Serve with a cup of consomme broth for dipping.
