Fried Plantains

Sweet Caribbean fried ripe plantains, turned golden, caramelised and tender in a hot pan. Using plantains that have ripened until their skins turn mostly black is what lets their natural sugars caramelise properly as they fry, rather than staying starchy and bland.

Ingredients

3very ripe plantains, peeled and sliced diagonally
3 tbspcoconut oil or vegetable oil
pinchcinnamon
pinchsalt

Instructions

Heat oil in a pan on medium.

Add plantain slices in a single layer.

Fry 2–3 minutes until golden.

Flip. Fry 2 more minutes.

Drain on paper.

Sprinkle with cinnamon and salt.

Serve as a side or snack.
