Ingredients

1 cupsourdough starter discard
1egg
1 tbspvegetable oil
1 tbspsugar
1/2 tspsalt
1/2 tspbicarbonate of soda
maple syrup and butterto serve

Instructions

Mix sourdough discard, egg, oil, sugar and salt.

Add bicarb and stir — it will foam.

Heat a buttered pan over medium heat.

Pour 1/4 cup per pancake. Cook 2-3 minutes until bubbles form. Flip and cook 1 minute.

Serve with butter and maple syrup.
