4ripe tomatoes, diced
1cucumber, diced
1red pepper, diced
4radishes, thinly sliced
4spring onions, sliced
1 large handfulfresh parsley
1 handfulfresh mint
4 tbspolive oil
3 tbsplemon juice
2 tspsumac
1 tspsalt
Instructions

Fry torn pita pieces in olive oil until golden and very crispy, drain and season.

Combine tomatoes, cucumber, pepper, radishes, spring onions and herbs in a bowl.

Dress with olive oil, lemon juice, sumac and salt.

Toss well.

Add crispy pita just before serving.

Toss once more and serve immediately before pita softens.

Dust with extra sumac before serving.
