Crispy Korean spring onion pancake with seafood and a soy dipping sauce. Using sparkling water in the batter rather than still gives pajeon its characteristic light crispness, since the bubbles create tiny air pockets as it cooks.

Ingredients

2 cupsplain flour
2 cupscold sparkling water
1egg
1 tspsalt
2 bunchesspring onions, cut into 5cm pieces
100gsquid or prawn (optional)
oilfor frying
3 tbspsoy sauce
1 tbsprice vinegar
1 tspsesame oil
sesame seedsfor dipping sauce

Instructions

Mix flour, sparkling water, egg and salt into a thin batter.

Lay spring onions and seafood in a well-oiled pan.

Pour batter over to cover.

Cook over medium-high 4 minutes until set and golden underneath.

Flip carefully.

Cook 3 more minutes.

Make dipping sauce: soy, vinegar, sesame oil and seeds.

Serve cut into wedges.
