Ingredients

200gplain flour
2 tbspcornflour
2eggs
250mlcold water
200gmixed seafood prawns and squid
6spring onions cut into lengths
2long red chillies sliced
sesame oilfor frying
3 tbspsoy sauce for dipping
1 tbsprice vinegar
1 tspsesame oil for dipping
chilli flakesto taste

Instructions

Whisk flour, cornflour, eggs and cold water into a thin batter. Season.

Fold in seafood, spring onions and chilli.

Heat sesame oil in a pan. Pour in batter to make a thick pancake.

Press down firmly. Cook 4 minutes until deeply golden. Flip carefully. Cook 3 more minutes.

Mix dipping sauce. Slice pancake and serve immediately.
