Stir-fried thick udon noodles with pork, cabbage and a rich soy-based sauce. Stir-frying the pork over very high heat before anything else goes in sears it fast enough to build proper flavour instead of steaming it grey.

Ingredients
4 portionsfresh udon noodles
200gpork belly, thinly sliced
1/4cabbage, roughly chopped
1carrot, julienned
3spring onions, sliced
3 tbspsoy sauce
2 tbspmirin
1 tbspsake
1 tbspoyster sauce
2 tbspvegetable oil
Instructions

Mix soy, mirin, sake and oyster sauce as noodle sauce.

Stir-fry pork over high heat until browned. Remove.

In same pan, stir-fry cabbage and carrot 2 minutes.

Add udon noodles, toss and break up.

Return pork, add sauce and spring onions. Toss vigorously. Serve immediately.
