6 cupsshoyu (soy-based) broth
300gchashu pork slices

Bring the shoyu broth to a gentle simmer while you cook the noodles separately, boiling the broth too hard can turn it cloudy and overly salty as it reduces.

Cook the ramen noodles until just tender, with a little bite left.

Drain quickly so they don't keep cooking in their own residual heat.

Divide the noodles among bowls, ladle over the hot broth, and top with chashu pork, a soft-boiled egg and spring onion while everything is still steaming hot.
