Japanese thinly sliced beef and onion simmered in dashi, mirin and soy over rice. Adding the beef in a single layer rather than a pile lets it cook through evenly in just a few minutes without turning tough.

400gbeef sirloin, very thinly sliced
1large onion, thinly sliced
300mldashi stock
3 tbspsoy sauce
3 tbspmirin
1 tbspsake
1 tspsugar
steamed riceto serve

Instructions

Combine dashi, soy, mirin, sake and sugar in a wide pan.

Bring to simmer. Add onion. Cook 5 minutes.

Add beef in a single layer. Cover and simmer 3–4 minutes.

Spoon over steamed rice.

Garnish with spring onion.

Serve with pickled ginger.
