4Vietnamese baguettes or small baguettes
300gpork belly, sliced
100gchicken liver pate
2 tbspmayonnaise
2carrots, julienned
1daikon radish, julienned
3 tbsprice wine vinegar
1 tbspsugar
1cucumber, sliced
2red chillis, sliced
1 handfulfresh coriander
2 tbspsoy sauce
1 tbspfish sauce
Instructions

Quick pickle carrot and daikon in vinegar, sugar and salt for 30 minutes.

Marinate pork in soy sauce and fish sauce, pan-fry until caramelised.

Split baguettes and warm in oven 5 minutes.

Spread pate on one side, mayonnaise on the other.

Layer pork, pickled vegetables, cucumber and chilli.

Stuff generously with fresh coriander and serve immediately.
