
Zuppa di Pesce Livornese
A bold Livornese fish stew with mixed seafood in a spicy tomato broth — serve with grilled bread. Adding the squid, mussels, fish and prawns to the pot in stages, in that order, keeps each type of seafood tender instead of some overcooking while others catch up.

300gfirm white fish fillets, diced
200gprawns, peeled
200gsquid, cleaned and sliced
300gmussels, cleaned
400gcrushed tomatoes
150mldry white wine
4 clovesgarlic, sliced
1 tspchilli flakes
4 tbspolive oil
1 handfulfresh parsley
Instructions

Heat olive oil in a large pot, sauté garlic and chilli until fragrant.

Add squid and cook 3 minutes, add white wine and let it bubble.

Add crushed tomatoes and 200ml water, simmer 15 minutes.

Add mussels, cover and cook 3 minutes until they open.

Add fish and prawns, cook gently 5 minutes until just cooked.

Scatter with parsley and serve with grilled sourdough.
