12lamb cutlets or forequarter chops
4 clovesgarlic, minced
2 tbspolive oil
1 tbspfresh rosemary, chopped
salt and pepperto taste
1 cupfresh mint leaves, packed
2 tbspwhite wine vinegar
1 tbspcaster sugar
4 tbspboiling water
Instructions

Mix garlic, olive oil, rosemary, salt and pepper. Rub over lamb chops. Marinate 30 minutes.

Make mint sauce: dissolve sugar in boiling water. Add mint and vinegar. Rest 15 minutes.

Barbecue chops over high heat 3-4 minutes per side for medium-rare.

Rest 3 minutes before serving with mint sauce and salad.
