Indo-Chinese crispy cauliflower in a tangy, spicy sauce — the most popular fusion dish in India. Frying the battered cauliflower until properly crisp and golden before it ever meets the sauce lets it stay crunchy instead of turning soft and soggy.

Make batter with flour, cornflour, chilli powder, garam masala and water.
Coat cauliflower in batter and deep fry at 180C until crispy and golden.
Drain on paper towel.
Fry garlic and ginger in 2 tbsp oil until fragrant.
Add soy sauce, chilli sauce, ketchup and sugar.
Add 3 tbsp water to thin sauce slightly.
Toss fried cauliflower in sauce until coated.
Scatter with spring onions and coriander, serve immediately.
