Ingredients

1large cauliflower, cut in florets
100gplain flour
50gcornflour
1 tspchilli powder
1 tspgaram masala
4 clovesgarlic, minced
2cmfresh ginger, minced
4spring onions, sliced
3 tbspsoy sauce
2 tbspchilli sauce
1 tbsptomato ketchup
1 tspsugar
oil for deep fryingabout 1L
1 handfulfresh coriander

Instructions

Make batter with flour, cornflour, chilli powder, garam masala and water.

Coat cauliflower in batter and deep fry at 180C until crispy and golden.

Drain on paper towel.

Fry garlic and ginger in 2 tbsp oil until fragrant.

Add soy sauce, chilli sauce, ketchup and sugar.

Add 3 tbsp water to thin sauce slightly.

Toss fried cauliflower in sauce until coated.

Scatter with spring onions and coriander, serve immediately.
