200gbrussels sprouts
1/2 cupmushrooms
2 cupssuet dumplings
1 tspwholegrain mustard
1 tbspmint sauce
1 tspmature cheddar
2 tspmalt vinegar
2 tbspolive oil

Instructions

Season the gammon and simmer it over medium-high heat until well browned, about 9 minutes.

Add the peas, brussels sprouts and mushrooms, cooking until softened, about 6 minutes.

Stir in the wholegrain mustard, mint sauce, mature cheddar and malt vinegar for 4 minutes.

Prepare the suet dumplings separately according to package directions.

Let the gammon simmer for about 11 minutes so the flavors meld.
