Classic British shepherd's pie, slow-cooked lamb mince simmered under a layer of creamy mashed potato. Roughing up the surface of the mash with a fork before it bakes is what creates all those little peaks that catch and crisp under the grill, rather than baking flat and smooth.

Ingredients
700glamb mince
2carrots, diced
2 stalkscelery, diced
1large onion, diced
2 clovesgarlic
2 tbsptomato paste
2 tbspWorcestershire sauce
300mllamb or beef stock
1.2kgpotatoes, mashed with butter and milk
50gcheddar, grated
Instructions

Brown lamb mince in batches. Remove excess fat.

Fry onion, carrot and celery 8 minutes. Add garlic and tomato paste.

Return lamb, add Worcestershire and stock. Simmer 20 minutes.

Spoon into a baking dish. Top with mashed potato, roughed up with a fork.

Scatter cheddar. Bake at 200°C for 25 minutes until golden.
