4pork loin cutlets
2 cupspanko breadcrumbs
1/2 cuptonkatsu sauce
2 / 1/2 cupegg and flour for coating

Coat the pork cutlet in flour, shaking off the excess, then dip in beaten egg.

Press the cutlet firmly into the panko so the crumb coating sticks all over.

Fry in plenty of oil until deep golden on both sides, about 4 minutes per side, without moving it too much so the crust sets properly.

Slice the cutlet into strips and serve immediately with tonkatsu sauce and shredded cabbage, while the coating is still at its crispest.
