1.2kglamb breast, bone in
2 tspcoarse sea salt
1 tspblack pepper
2 tbsptallow or lamb fat
Instructions

Season lamb breast generously with salt and pepper.

Rub with tallow.

Roast at 160C for 2.5 hours until very tender.

The fat should be completely rendered.

Increase to 220C for 20 minutes to crisp the top.

Rest 15 minutes.

Slice between the ribs.

Serve with rendered pan juices.
