2 tbspapple cider vinegar

2 tspcoarse sea salt
Instructions

Roast bones at 200C for 30 minutes until browned.

Transfer to a large pot with water and apple cider vinegar.

Rest 30 minutes before heating — the vinegar helps extract minerals.

Bring slowly to boil, skim thoroughly.

Reduce to the lowest possible simmer.

Simmer 24 hours — the longer the richer.
