1sweet potato, cubed
1onion, quartered
100groasted peanuts
400mlcoconut milk
2 tbspmassaman paste
2 tbspsoy sauce
1 tbsptamarind paste
1 tbsppalm sugar
2 tbspcoconut oil

Instructions

Fry paste in oil 1–2 minutes.

Add coconut milk, bring to simmer.

Add potatoes, sweet potato and onion. Cook 25 minutes until tender.

Add peanuts, tamarind, soy and palm sugar.

Taste, adjust and simmer 5 more minutes. Serve with jasmine rice.
