Ingredients

4 clovesgarlic
6Thai green chillies
3 tbspfish sauce or soy sauce
4 tbsplime juice
1 tbspsugar
1 handfulcoriander stems, finely chopped

Instructions

Pound garlic and chilli to a coarse paste in a mortar.

Add fish sauce, lime juice, sugar and coriander. Mix.

Taste and balance — should be salty, sour, spicy and slightly sweet.

Serve with grilled prawns, fish or oysters.
