1kgchicken pieces, bone in
2large onions, thinly sliced
4 clovesgarlic, minced
2cmfresh ginger, minced
2 tbspfreshly cracked black pepper
1 tspturmeric
1 tspgaram masala
20curry leaves
3 tbspcoconut oil
1 tspfennel seeds
1 handfulfresh coriander
Instructions

Marinate chicken in turmeric, garam masala and salt for 30 minutes.

Heat coconut oil, add fennel seeds and curry leaves.

Add onions and cook until very dark golden.

Add garlic and ginger, cook 2 minutes.

Add chicken pieces and cook over medium heat turning regularly.

Add black pepper and toss well.

Cover and cook 30 minutes until chicken is cooked through.

Uncover and fry on high heat to dry out and crisp — scatter with coriander.
