Slow-cooked chicken in a handi clay pot with whole spices and yoghurt — smoky, aromatic and tender. Sealing the pot with foil before it goes in the oven traps the steam that keeps the chicken from drying out.

Ingredients
1kgchicken pieces, bone in
300mlfull fat yoghurt
2large onions, diced
400gcrushed tomatoes
4 clovesgarlic, minced
3cmfresh ginger, minced
2 tspgaram masala
1 tspturmeric
1 tspchilli powder
4 tbspghee
4cardamom pods
1cinnamon stick
4cloves
1 handfulfresh coriander and mint
Instructions

Marinate chicken in yoghurt, garlic, ginger and half the spices overnight.

Fry whole spices in ghee, add onions and cook until very golden.

Add remaining ground spices, cook 2 minutes.

Add tomatoes, cook 8 minutes.

Add marinated chicken, bring to boil.

Transfer to a clay pot or heavy casserole dish.

Seal with foil, cook at 160C for 45 minutes.

Open at the table, scatter with coriander and mint.
