Ingredients

800glamb shoulder, diced
500gfresh spinach, blanched and blended
2large onions, diced
400gcrushed tomatoes
4 clovesgarlic, minced
2cmfresh ginger, minced
2 tspground coriander
1 tspturmeric
1 tspgaram masala
1 tspchilli powder
200mldouble cream
4 tbspghee
1 tspcumin seeds

Instructions

Fry cumin seeds in ghee until they pop, add onions and cook until golden.

Add garlic and ginger, cook 2 minutes.

Add all ground spices, cook 2 minutes.

Add lamb and brown on all sides over high heat.

Add tomatoes and cook 5 minutes.

Add blended spinach and 200ml water, cover and simmer 45 minutes.

Add cream and simmer 10 more minutes until lamb is very tender.

Season generously, serve with naan or rice.
