Ingredients

600gpork shoulder, very thinly sliced
3 tbspgochujang
2 tbspsoy sauce
2 tbspsesame oil
1 tbspsugar
1 tbspmirin
4 clovesgarlic, minced
1cmfresh ginger, minced
1onion, thinly sliced
3 tbspvegetable oil
butter lettuce leavesfor serving
steamed ricefor serving
kimchifor serving

Instructions

Mix gochujang, soy, sesame oil, sugar, mirin, garlic and ginger.

Toss pork and onion in marinade, rest 1 hour.

Heat wok or griddle pan until very hot.

Cook pork in batches without crowding — let it caramelise.

Serve pork in lettuce cups with rice and kimchi.
