3/4 cupcaster sugar
2 tbspgolden syrup
2 tspbicarbonate of soda
2 cupsplain flour

Melt butter, sugar and golden syrup together over low heat until dissolved.

Remove from heat and add bicarb — it will foam. Stir quickly.

Sift in flour and mix into a stiff dough.

Roll into balls and place on lined trays. Flatten with a fork.
