Sweet fresh corn arepas with melting cheese — Colombia's street-side snack. Covering the arepa with a lid once the cheese goes on top melts it through gently without needing to flip and risk burning the corn dough underneath.

Ingredients
2 cupsfresh or frozen corn kernels
1 cupmasarepa (pre-cooked corn flour)
50gbutter, melted
2 tbspcaster sugar
1 tspsalt
150gmozzarella or queso fresco, sliced
Instructions

Blend corn with a little water until smooth.

Mix corn purée with masarepa, butter, sugar and salt. Form a soft dough.

Shape into 1cm thick rounds.

Cook on a buttered griddle or pan over medium heat 5 minutes each side.

Place cheese on top. Cover with a lid until melted.

Serve immediately.
