Moqueca Baiana

Bahian fish stew in coconut milk and palm oil with coriander, one of Brazil's great dishes. Marinating the fish in lime juice, garlic and salt before it goes into the stew firms it up and seasons it through, not just on the surface.

Ingredients

800gfirm white fish fillets
400mlcoconut milk
2 tbsppalm oil (dendê)
2tomatoes, diced
1onion, diced
1red capsicum, diced
4 clovesgarlic, minced
coriandergenerous bunch
juice of 1lime
saltto taste

Instructions

Marinate fish in lime juice, garlic and salt 30 minutes.

Fry onion and capsicum in palm oil until soft. Add tomatoes.

Add coconut milk. Simmer 5 minutes.

Add fish. Simmer gently 10–12 minutes until just cooked.

Scatter coriander generously. Serve with rice and farofa.
