250gplain flour
200gcaster sugar
2 tspbaking powder
1 tspsalt
3eggs
200mlbuttermilk
80gbutter, melted
1 tspvanilla extract
500mlwhole milk for pastry cream
4egg yolks
80gsugar for pastry cream
3 tbspcornflour
200gdark chocolate
200mldouble cream for ganache
Instructions

Make cakes: mix flour, sugar, baking powder and salt, add eggs, buttermilk, butter and vanilla.

Bake in two 20cm tins at 175C for 25 minutes. Cool completely.

Make pastry cream: heat milk, whisk yolks with sugar and cornflour.

Pour hot milk over egg mixture, return to heat and stir until thick.

Cool with cling film pressed on surface.

Make ganache: heat cream, pour over chopped chocolate, stir until smooth.

Fill cake layers with pastry cream.

Pour ganache over the top and let it drip down the sides.
