A whole mud crab stir-fried hard and fast in garlic, ginger and chilli — an Aussie Chinese-restaurant classic. Keeping the wok screaming hot throughout sears the shell and locks the sauce onto the meat instead of steaming it soft.

Ingredients

1large mud crab, about 1.2kg, cleaned and cut into pieces
8 clovesgarlic, minced
3 cmfresh ginger, julienned
2long red chillies, sliced
4 tbspvegetable oil
2 tbspoyster sauce
2 tbspsoy sauce
1 tbspfish sauce
1 tspsugar
1/2 cupchicken stock
spring onion and corianderto garnish

Instructions

Heat oil in a large wok over high heat. Add garlic, ginger and chilli. Fry 30 seconds.

Add crab pieces. Stir-fry on high heat for 5 minutes.

Add oyster sauce, soy, fish sauce, sugar and stock.

Cover and cook 8-10 minutes until crab is cooked through.

Garnish with spring onion and coriander.
