Suya Skewers
Nigerian suya skewers get a generous, thick coating of ground peanut and chili spice before grilling hard and fast until properly charred at the edges.
Ingredients
Instructions
Toast the raw peanuts in a dry pan until fragrant, then blitz to a coarse powder.
Mix the ground peanuts with the chili, ginger, garlic powder and stock cube to make the suya spice.
Thread the beef onto skewers, brush lightly with oil, then coat generously in the suya spice, pressing it on so it sticks.
Grill over high heat, turning often, until the spice coating is charred in spots and the beef is cooked through, about 8-10 minutes, serve with extra spice and sliced onion.
