5ginstant yeast
2 tbspsugar
150mlwarm milk
1 tspbaking powder
300gpork mince
4spring onions, minced
2cmfresh ginger, minced
2 tbspsoy sauce
1 tbspsesame oil
1 tbspShaoxing wine
1 tspsugar
Instructions

Mix flour, yeast and sugar, add warm milk and knead 10 minutes into a smooth dough.

Prove covered 1 hour until doubled.

Mix pork with spring onion, ginger, soy, sesame oil, wine and sugar.

Knock back dough, add baking powder and knead briefly.

Divide into 16 pieces, roll into circles, place filling in centre.

Pleat edges together to seal, place on baking paper squares.

Prove 20 minutes, then steam over boiling water 12 minutes.
