2 tbspvegetable oil
60mlponzu sauce
1 tbspmirin
2 clovesgarlic, thinly sliced and fried crispy
spring onions, daikon and sesame seedsto serve

Season beef all over with salt. Sear in hot oil all sides 1–2 minutes total — meat should be rare inside.

Immediately submerge in iced water 5 minutes to stop cooking. Pat dry.
