400gflat rice noodles
200gcockles or prawns
2Chinese sausages, sliced
2eggs
100gbean sprouts
3 tbspdark soy sauce
2 tbspsoy sauce
1 tbspoyster sauce
2 tbsplard or oil
spring onions and chillito serve
Instructions

Heat wok with lard until very hot.

Add sausage and prawns, stir-fry 1 minute.

Add eggs, scramble briefly.

Add noodles and toss hard over high heat.

Add sauces, bean sprouts and spring onions.

Toss vigorously. Top with chilli and extra spring onion.
