3guajillo chillies, toasted and soaked
3ancho chillies, toasted and soaked
4 clovesgarlic
1cinnamon stick

4 cupsbeef broth
corn tortillas
mozzarella or Oaxacan cheese

Blend soaked chillies, garlic, spices, and broth for adobo.

Braise beef in adobo 3 hours until very tender. Shred. Reserve broth.

Dip tortillas in broth fat; cook in pan; add cheese and meat; fold.
