250gtapioca flour (polvilho azedo)
125mlwhole milk
125mlvegetable oil
1 tspsalt
2eggs
150gParmesan or aged cheese, finely grated
Instructions

Heat milk, oil and salt until just boiling.

Pour over tapioca flour and stir to combine.

Cool slightly. Beat in eggs then cheese to form a sticky dough.

Roll into 4cm balls.

Bake at 200°C for 20–25 minutes until puffed and golden.

Serve warm.
