2kgleg of lamb
6 clovesgarlic, sliced
3 sprigsfresh rosemary
3 tbspolive oil
1 tspsea salt
1 tspcracked pepper
1 cupred wine
1 cupbeef stock
mint sauceto serve
Instructions

Make incisions all over the lamb. Insert garlic and rosemary sprigs.

Rub with olive oil, salt and pepper.

Roast at 200°C for 20 minutes. Reduce to 180°C. Continue for 1 hour (medium-rare) or 1 hour 20 minutes (well done).

Rest 20 minutes.

Make gravy from pan juices, wine and stock. Serve with mint sauce.
