Ingredients

400gplain flour
1 tspcarom seeds (ajwain)
4 tbspoil
200mlcold water
400gpotatoes, boiled and diced
150gpeas
1 tspcumin seeds
1 tspgaram masala
1 tspamchur
2green chillies, minced
vegetable oilfor deep frying

Instructions

Mix flour, carom seeds, oil and salt. Add cold water to make a firm dough. Rest 30 minutes.

Fry cumin seeds in oil, add peas, potato, chillies and spices. Cool completely.

Roll dough thin, cut circles, fold into cones, fill with potato mixture, seal with water.

Deep-fry at 170°C for 5–6 minutes until golden and crispy.

Serve with mint-coriander chutney and tamarind sauce.
