Ingredients
200gchana dal, soaked
300gspinach, chopped
200gfenugreek leaves or 2 tbsp dried
2potatoes, diced
1eggplant, diced
2carrots, diced
3tomatoes, diced
1large onion, diced
4 clovesgarlic, minced
2cmfresh ginger, minced
1 tspturmeric
1 tspchilli powder
3 tbspghee or oil
1 tspcumin seeds
Instructions

Pressure cook or simmer soaked dal until almost soft.

Add all vegetables to the dal, simmer 20 minutes until everything is very soft.

Mash everything together into a thick, chunky mixture.

Make tempering: fry cumin seeds in ghee, add onion until golden.

Add garlic and ginger, cook 2 minutes.

Add turmeric and chilli powder.

Pour tempering over vegetable dal mixture.

Stir through and serve with roti and rice.
