400gdried black-eyed peas, soaked overnight
1onion, grated

palm oil (dendê)for deep frying
vatapá, dried shrimp, caruruto fill
Instructions

Peel soaked peas by rubbing between hands. Blend with onion and salt to a thick paste.

Heat palm oil in a deep pan to 180°C.

Form paste into oval patties. Deep-fry 4–5 minutes until crispy and golden.

Drain on paper towels.

Split each fritter and fill with vatapá and dried shrimp toppings.
