1/2 cupeggplant
150gparsley
300gflatbread
1 tsptahini
1 tspsumac
1/4 cupgarlic
1 tspcumin
3 tbspolive oil

Instructions

Slice the halloumi and stir-fry it over medium-high heat until well browned, about 10 minutes.

Add the red onion, eggplant and parsley, cooking until softened, about 7 minutes.

Stir in the tahini, sumac, garlic and cumin for 2 minutes.

Warm the flatbread separately.

Let everything simmer for about 9 minutes so the flavors meld.
