200gpitted dates, chopped
1 tspbicarbonate of soda
1 cupboiling water
100gbutter
3/4 cupbrown sugar
1egg
1 1/2 cupsself-raising flour
1 tspvanilla extract
100gwalnuts, roughly chopped

Instructions

Soak dates in boiling water with bicarb. Cool.

Beat butter and sugar. Beat in egg. Add vanilla.

Fold in flour, dates with their liquid and walnuts.

Pour into a greased loaf tin.

Bake at 180°C for 50 minutes. Serve sliced with butter.
