Cock-a-Leekie Soup

Ingredients

1whole chicken (about 1.5kg)
3leeks, thickly sliced
3carrots, diced
1/2 cuppearl barley
8pitted prunes, halved
2Lwater or chicken stock
1bay leaf
fresh thymefew sprigs
salt and pepperto taste

Instructions

Place chicken in a large pot with water, bay leaf and thyme. Bring to a boil and skim.

Simmer 1 hour until chicken is very tender. Remove and cool. Strip meat off the bone.

Return meat to pot. Add barley, carrots and half the leeks. Simmer 30 minutes.

Add remaining leeks and prunes. Cook 10 minutes. Season.
