Ingredients

200gblanched almonds, toasted
200ghazelnuts, toasted
150gdried figs, chopped
100gcandied orange peel
100gcandied lemon peel
100gplain flour
2 tbspcocoa powder
1 tspground cinnamon
1 tspmixed spice
200ghoney
150gsugar
2 tbspicing sugar for dusting

Instructions

Line a 22cm tin with rice paper or baking paper, preheat oven to 150C.

Combine nuts, dried fruits, flour, cocoa and spices in a large bowl.

Heat honey and sugar together until sugar dissolves and reaches 115C.

Pour hot honey over nut mixture, stir quickly until combined — it will be very stiff.

Press into prepared tin as evenly as possible — wet hands help.

Bake 30 minutes until just set — it will still be soft but firms as it cools.

Cool completely, dust thickly with icing sugar before cutting.
