Ingredients

400gdried soba noodles
400mldashi stock
4 tbspsoy sauce
4 tbspmirin
1 tspsugar
spring onions, nori, wasabi and grated daikonto serve

Instructions

Cook soba noodles, drain and rinse well under cold water until completely cold.

Simmer dashi, soy, mirin and sugar together 3 minutes. Cool completely.

Serve cold noodles on bamboo strainers.

Pour dipping sauce into small cups.

Dip noodles into sauce with spring onion, wasabi and daikon.
