300gmaize meal (white cornmeal)
900mlwater
400gcollard greens, shredded
1onion, diced
2 clovesgarlic, minced
2 tbspoil
saltto taste

Instructions

Bring water to boil in a heavy pot.

Gradually add maize meal, stirring constantly.

Cook over low heat stirring 10 minutes until very thick and pulls from sides.

For sukuma wiki: fry onion and garlic. Add collard greens. Cook 5–7 minutes.

Serve ugali moulded into a dome alongside sukuma wiki.
