Rwandan Isombe
Rwandan cassava leaves simmered with eggplant, spinach and ground peanuts — East African comfort food. Simmering the cassava leaves for a full twenty minutes is what breaks down their fibrous texture into something tender, since they stay tough and bitter if undercooked.
