200gpork mince
150graw prawns, finely chopped
3spring onions, minced
2cmfresh ginger, minced
2 tbspsoy sauce
1 tbspsesame oil
1 tspsugar
24wonton wrappers
1.2Lgood chicken stock
2 tbspsoy sauce for broth
1 tspsesame oil for broth
4spring onions, sliced for garnish

Instructions

Mix pork, prawns, spring onions, ginger, soy, sesame oil and sugar.

Place a teaspoon of filling in the centre of each wrapper.

Moisten edges, fold into triangles, bring corners together and seal.

Season stock with soy sauce and sesame oil, bring to a simmer.

Cook wontons in a separate pot of boiling water 4 minutes until they float.

Transfer wontons to serving bowls with a slotted spoon.

Ladle hot seasoned broth over wontons, scatter with spring onions.
