Ingredients

4potatoes, boiled and mashed
1cauliflower, boiled until soft
200ggreen peas, boiled
2capsicums, diced
2large onions, diced
400gcrushed tomatoes
3 tbsppav bhaji masala
1 tspturmeric
1 tspchilli powder
80gbutter
8soft dinner rolls pav
1lemon, juiced
1 handfulfresh coriander

Instructions

Mash together potato, cauliflower and peas into a rough mash.

Fry onion and capsicum in butter until soft.

Add tomatoes and all spices, cook 10 minutes.

Add vegetable mash and mix vigorously — it should become one cohesive bhaji.

Add water to adjust consistency, cook 15 minutes stirring frequently.

Add lemon juice and more butter, season generously.

Slice rolls and toast in butter until golden on cut side.

Serve bhaji topped with coriander, diced onion and lemon with buttered pav.
